Chocolate + Zucchini Muffins

Ever feel like convincing your toddler to eat anything green is like trying to diffuse a hostage situation? Step right up mama, I got your back.

When these babies were done baking there wasn't a suspicious green shred in sight, guaranteed toddler approved. The original recipe was a little sweet for my liking, so I amended the sugar (halving the total and adding only brown sugar), and the chocolate chip amounts. With the new amounts they were just right. Sweet enough to satisfy a hangry small, and with the addition of the zucchini you feel like you may just be the greatest mom ever.

If you have a Sherlock Holmes for a child, then it may be better to peel the zucchini first to really sell it, but I'm lazy, and already baking you damn muffins, so tough.

In a bowl combine the eggs, applesauce, brown sugar, and zucchini.

Fold in the dry ingredients.

Fold in the chocolate chips.

Fill the muffin tin to 3/4 full.

Bake 17 - 20 minutes in a 200 degrees Celsius (400 degrees Fahrenheit) oven. Let cool, and enjoy!

Ingredients - Makes 12

2 large eggs
1/2 cup applesauce
1/2 cup brown sugar
2 cups zucchini, grated
1 1/2 cups flour
1/2 cups unsweetened cocoa powder
2 tsp baking powder
170g or 6 oz Semi-sweet chocolate chips or mini chocolate chips


1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and spray one standard muffin tin (12) with non-stick cooking spray or line with cupcake liners.
2. Combine the eggs, applesauce, sugar, brown sugar and shredded zucchini.
3. Slowly fold in the dry ingredients and the chocolate chips.
4. Fill each muffin well about 3/4 full.
5. Bake 17-20 minutes.
